Our story

Elevated, and deeply personal.

We opened our doors in Lexington with a simple intention: to create something that feels both elevated and deeply personal. Our menu is shaped by the ingredients around us, the farmers we work with, and the belief that every detail matters, from what’s on the plate to how a guest feels when they walk through the door.

Built from the ground up by Dallas Rose and Alex Green, Mileta has always been a hands-on project. Mileta is a contemporary restaurant with global influences: handmade pasta is a cornerstone of our menu, and our cooking draws from many cuisines and techniques. We make almost everything in-house… except the ketchup.

Our bar program is led by a small, collaborative team of bartenders who are constantly experimenting — from mushroom fat-washed bourbon to thoughtful riffs on familiar classics. Ask what we’re playing with; we love to offer something off menu.

  • The bar is open until midnight Friday and Saturday
